First Contact

I first want to thank LawDog and Phlegmmy for opening their home and the hospitality they showed.  I believe a great time was had by all with awesome company, great stories, lots of laughs chased by mouth watering food and drink.  It was a pleasure to meet each of you and to be able to put faces with names.

As promised the recipe for the Sopaipilla Cheesecake

2 –  cans of croissants

2 – 8 oz boxes of cream cheese

1 cup of sugar

1 tablespoon of cinnamon

1 teaspoon of vanilla

1 stick of butter

Preheat oven to 350.  In a bowl combine 1/2 cup of  sugar and cinnamon stirring until mixed well and set to the side.  In a mixing bowl combine cream cheese, remainder of sugar, and vanilla and beat until mixed well.  In a 9 X 13 pan roll out one can of croissants (do not tear them apart).  Spread cream cheese mixture evenly over the croissants.  Roll out second can of croissants (not tearing them) over the cream cheese mixture.  Melt stick of butter and pour evenly over the croissants and then sprinkle cinnamon and sugar evenly.  Bake for 30 minutes.  This can be served warm or cold depending on your preference.
